Empty store cupboard?
Your store cupboard and freezer may be looking a bit depleted after the storm, with only random tins and miscellaneous frozen parcels remaining. Before you restock again, take the opportunity to do a big clear out and use up anything left before you restock.
This is especially important for your freezer if you lost power over the last few days. And for those who managed to survive the storm without losing electricity, remember that freezing your food doesn’t keep it for ever, it just slows down the deterioration. If left in the freezer too long, some food like fish or prawns will change texture when defrosted. They will still taste great in this easy Thai curry though, as will chicken, duck or tofu. Try making flat bread
If you haven’t been able to stock up on fresh bread yet or just fancy a change, try these easy wholegrain flatbreads, great with a warming soup like this coconut lentil soup, a favourite from our recent vegan blog. They make a great pizza base too.
Use up tinned or dried beans
Many of us still have tins of cooked beans, or even packets or dried beans, stashed away in the cupboard. Put them to good use in our healthy baked beans, a much healthier option than the branded baked beans widely available that contain around 5 tsp sugar per can. This recipe can be used to make Middle Eastern eggs or vegetable chilli too.
Restock wisely
